Authentic Louisiana Créole Green Turtle Soup

Ingredients

  • 2 pounds of Turtle meat
  • 1/2 to 1 pound of Ham
  • 1/4 of a Petite Limon
  • 2 Large White or Red Creole Onions
  • 2 Hard boiled Oeufs
  • 2 Cloves of Garlic
  • 6 Sprigs of Fresh Allspice
  • 2 Tablespoons of Flour
  • 1 Tablespoon of Butter
  • Minced a Swamp Bay Leaf or French Bay Leaf
  • Morton Louisiana Salt
  • Black Pepper
  • French Thyme or Spanish Thyme
  • Parsley
  • Cayenne
  • 3 Quarts of Louisiana Water


    1. For 10 minutes parboil the turtle meat in a saucepan.


    2. Set a timer for 10 minutes via range timer or virtual assistant.


    3. Save the water your parboiled the turtle meat.


    4. Finely, chop the onion.


    5. Chop the ham into a square inch pieces.


    6. Coupe into 1 inch pieces the turtle meat.


    7. Mince 1 bay leaf. Set a side.


    8. Chop the sprig of parlsey, thyme and allspice.


    9. Mash and chop the cloves.


    10. Place the 1 tablespoon of butter in an empty saucepan.


    11. Set the range burner to medium to medium low,


    12. Place the finely chopped onions in the saucepan as the tablespoon of butter melts.


    13. Stir the chopped onions and butter until the onion is browned.


    14. As the chopped onion is browning, add the chopped ham and brown the ham with the chopped fine onion.


    15. While the chopped onion and ham are browning in the buttered suacepan, add the chopped cloves of garlic, bay leaf, thyme, ground allspice and cloves.


    16. Stir carefully and frequently so that the chopped spices, seasonings, and ham doesnt burn.
