Authentic Candied Sweet Potatoes Recipe

Made from the sweet potato harvest from our Creole Kitchen garden this autumn, this dish is a part of our 2022 Jour d'action de grace (Thanksgiving) menu. Have an Authentic Creole Thanksgiving for your family and beloved love ones.



Make Groceries

Garden fresh Sweet potatoes or Farmers Market Fresh Sweet potatoes

Water

Brown sugar

White sugar

Butter

Vanilla

Cinnamon

Nutmeg

Marshmellows

Pecans (optional)



Prep

Throughly clean sink

Throughly cleaned countertops and/or islans/pensiluar

Dry clean towel for cooking proposes layed out on top of your working surface such as the countertops, island or peninsulia.

Other clean kitchen towels set neatly nearby on hand for drying each sweet potato one at a time.

Take a petit few of sweet poatoes to a clean sink.



With a wood brush and natural bristles, which is designed for washing dishes, however brand new or have prior designated for cleaning fresh produce, rinse with room temperature water and gently rubbed against Marseille soap, Province soap or Avignon soap.



Once the bristles have retained suds, gentle wash each sweet potato with the sudsy nature bristled brush to remove debris, dirty and/or soil.



Once the sweet potatoes are thoroughly cleaned and rinse each sweet potato with room temperature water and place on a clean dry towel.



Take a clean dry towel and dry each sweet potato by hand and place one sweet potato on a cutting board.



Place the other throughly dried sweet potatoes in a clean bowl and place the bowl on the side near the cutting board.



Or, on another the clean work place near the cutting board.



Cut one sweet potato into thick medium to large pieces.



Put in a medium pot, cup of water, cup of brown sugar, cup of white sugar, vanilla, dashes of cinnamon and nutmeg.



Set your range to



Stir and let the mixture boil into a syrup.



Turn your range down.



Begin putting your cut sweet potatoes into the syrup and gently fold the sweet potatoes into the syrup as you stir.



Cover the medium pot with its lid.



Keep an eye on the sweet potatoes and it simmers inside of the syrup. You are looking for the sweet potatoes to soften and mash a bit.



Once the sweet potatoes texture becomes a bit into a mashed like consistency, butter the sweet potatoes.
